Ingredients
1 Oz of butter
1 Oz of flour
1 Oz of parmigiano
8.5 Fl Oz of milk
Salt as needed
Nutmeg as needed
Directions
Put in a mixing bowl the flour, the milk and the salt.
Mix the ingredients and filter with a strainer.
Simmer the compound, stirring continuously with a whip or a wooden spoon until it becomes dense. Once cooked add the butter, the nutmeg, and the parmigiano. Stir until mixed.

Besciamelle is recommended in the preparation of stuffing for puff pastry, gratin dishes and souffle.
