Pastificio Arte & Pasta is based in Boscoreale, at the foot of the Vulcano Vesuvio, near renowned pasta production cities- Torre Annunziata and Gragnano. Master pasta maker Francesco Gallo affectionately called “Uncle Ciccio” and his two sons, produce bronze-drawn pasta respecting the tradition of Torre Annunziata. They only select “Mastro Pastaio” – the best grains, grown exclusively in Italy. They draw their pasta through bronze dies, drying slowly at low temperatures. The important steps of deciding when the dough is ready to be drawn and when to remove the pasta from the dryers are still done by their pasta makers and not decided by machines.
